You’ve got your meat, potatoes and veggie cooked and ready to eat once the time is up! CROCK POT CREAMY RANCH CHICKEN Serves 4 Delicious creamy ranch chicken, potatoes and carrots slow cooked in the crock pot. This makes for a great family meal! Prep Time 15 min Cook Time 5 hr INGREDIENTS 4 boneless skinless chicken breasts 6 medium Russet potatoes, cut into 2-inch pieces 2 cups baby carrots 1 large (23 oz.) can condensed cream of chicken soup 1 (1 oz.) packet dry ranch dressing mix (or use my homemade recipe below) 1/2 cup milk fresh chopped parsley (optional) INSTRUCTIONS Spray a large crockpot (I use a 7 quart) with non-stick spray. HEALTHY RAW RED VELVET FUDGE Here I go again with the Raw Fudge! I can’t stop, I swear. I’m addicted to the super creamy textures, I’ve fallen in love with the amazing flavors, and I’m in complete adoration over the beautiful colors. Kenji’s delicious recipe for the Double Double Animal-Style Cheeseburger was such a spot on hit, I’ve carried it through to the next day to recreate the Animal Style French Fries to accompany it. Kenji declined to make the French fries because he declared that In-N-Out has never really been known for their fries. This, I hate to admit, is pretty true. Iowa Loose Meat Sandwiches This recipe is basically just a really easy hamburger. (Is it insulting to Iowa to say that?) America's Test Kitchen gives us this very quick recipe perfect for busy nights filled with carnivores. INGREDIENTS: 1 pound 85 percent lean ground beef 1/4 cup water 1 tablespoon yellow mustard, plus extra for serving 1 teaspoon sugar 1 teaspoon salt 1 teaspoon pepper 1/2 cup finely chopped onion 4 hamburger buns Sliced dill pickles INTRUCTIONS : Combine beef, water, mustard, sugar, salt, and pepper in 10-inch skillet. Bring to simmer over medium heat, breaking up meat with spoon. Reduce heat to medium-low to maintain gentle simmer and cook, stirring frequently, until meat is no longer pink, about 5 minutes. Stir in onion, cover, and remove from heat; keep warm while preparing buns. Spread extra mustard on bun bottoms then, using slotted spoon, mound beef mixture over top. Cap with pickles and bun tops. Grilled Zucchini Nachos Zucchini season is definitely here! The stores are full of it and it 's pretty cheap so I picked up a lot of it with the plan to start off by making these grilled zucchini nachos! The idea is to slice the zucchini into 1/4 inch discs, grill them until just tender, but still crisp, and then to top them with a bunch of nacho toppings including plenty of melted cheese! As far as the toppings go I start out with some grilled corn off the cob, black beans, tomatoes, jalapenos, onions, avocado, cilantro and a finish of sour cream. With all of the fresh summer ingredients, these grilled zucchini nachos are pretty healthy in addition to being nice and tasty! One of the great things about these zucchini nachos is that you can top them with whatever you want so feel free to use your favourite nacho toppings! Italian Herb Baked Meatballs Our family's favorite meatballs are loaded with fresh herbs and cheese. They are bursting with flavor. You can make pasta sauce, but there is truly no need. They are the best daggum meatballs ever! No sauce required. Simple recipe, magnificent meatballs!  Last week we had my bestie over for her birthday and I made my favorite 40 Minute Quick and Easy Cheesy Meat Lasagna, It is outrageous and goes in the oven in just 15 minutes. CREAM CHEESE LEMONADE BLACKBERRY CREPES Crepes are so delicious and these cream cheese lemonade blackberry crepes are super delish too! If you are a lover of lemon, and you are a lover of blackberries, then you are going to love these crepes. Crepes are pretty simple to make. One of the tricks is to make sure to swirl the crepe batter around in the pan covering the entire bottom with a very thin layer. Cook for 1-2 minutes and then flip over and cook for an additional minute or so. Place each crepe on a plate until all crepes are made and let cool. SO DELICIOUS To assemble the cream cheese lemonade blackberry crepes, first, take a cooled, thin crepe and spread cream cheese lemonade filling over the entire crepe. Next, spoon blackberry filling on top of the lemonade filling and roll up.
